Decorating A Christmas Cake With Buttercream Icing

Three ways to decorate a Christmas cake

You don't need a fancy dessert for Christmas, you can jazz up an ordinary butter cake and make it Yuletide fabulous with these three simple ideas.

Ingredients

Candy cane forest cake

  • 1 butter cake (circular)
  • 1 1/2 cup buttercream icing
  • 50 candy canes

Coconut snowfall cake

  • 1 chocolate cake (circular)
  • 1 1/2 cup buttercream icing
  • 1/2 cup shredded coconut

Berry wreath cake

  • 1 butter cake ("O" shaped)
  • 200 ml cream (whipped)
  • 200 g mixed berries (fresh)

    Candy cane forest cake:

    Make the buttercake according to packet instructions. Let it cool and then put it in the fridge for half an hour before you ice it. Spread buttercream icing over the top and edges of the cake. Smooth the icing with a warm palette knife, (dip it in hot water and wipe it dry). Add candy canes around the edge of the cake. Top the cake with a 'forest' of candy canes. If you can find different sizes of candy canes, use them to create a varied look on top the cake.

    Coconut snowfall cake:

    Make the chocolate cake according to packet instructions. Let it cool and then put it in the fridge for half an hour while you make the icing. Do a crumbcoat first: cover the cake in a thin spread of buttercream icing to serve as an undercoat. Refrigerate it for half an hour to set.

    Now add the main layer of buttercream icing all over the cake. It doesn't need to be smooth, just thick and generously spread. Sprinkle the cake liberally with shredded coconut and press shredded coconut into the sides of the cake. Top with your favourite Christmas decoration.

    Berry Wreath cake:

    Make a buttercake according to the packet instructions. Pour it into a greased and lined "O" shaped cake tin and bake it accordingly. Let it cool completely and put it in the fridge while you whip some cream. Put the cream plus two tablespoons of icing sugar into the bowl of an electric mixer and whip until the cream is light and airy.

    Spread the cake with generous dollops of whipped cream all over the top and sides, don't forget the inside of the "O". It doesn't need to be smooth. Hull the strawberries and cut them in half. Add your berries in a wreath pattern on top of the cake.

    Add some sprigs of rosemary or fake holly from a Christmas decoration to finish off your wreath.

Notes

  • Use a standard butter cake or chocolate cake recipe for any one of these three ideas.
  • For the coconut snowfall cake you can top it with a pile of tinned cherries plus sprigs of rosemary if you prefer an edible cake topper.
  • You can skip the crumb coat if you are pressed for time.
